Recipe: Chicken with mango and toasted almonds


I love chicken so in all variations. I think it's particularly good if the court sometimes has a fruity note. Mango fits there really great with chicken and also tastes very refreshing. Overall it is a very low fat, delicious and quick meals that also serves as a super bento side dish.

Serves 4:
  • 2 mangoes
  • 300g chicken breast
  • 50g blanched almonds, toasted
  • 4 tsp light soy sauce 1 teaspoon sugar
  • 2 teaspoon cornstarch 1 teaspoon Sake
  • water 2 tsp oil for frying
first solve first the flesh of the mango from the core, peel and cut into bite-size pieces or strips.

second chicken rinse , pat dry with kitchen paper and cut it into bite-size pieces or strips.

third In a bowl, mix soy sauce, sugar, sake, cornstarch and water to make a marinade. The chicken in the bowl, mix well with the marinade and pull for 20 minutes.

4th In the meantime, contact the slivered almonds are roasted in a pan with constant. Allow to cool and set aside.

5th Heat a little oil in a pan. The chicken meat and fry well, then put something down heat and add the mango pieces. This also again for 1-2 minutes to sear. All in a bowl and Sprinkle with the toasted almonds and serve hot as possible. fits well as a side dish with rice.
